With Hart, at the amazing @nicolaslerestaurant. Finally, a little 1-1 date 🙂

Birthed in 2020 after the restructuring of Domaine Pierre Amiot, the 2021 Chambolle bottling is the first vintage of Domaine Didier Amiot. We had the choice between a very traditional Chambolle winemaker, or a newer style. We decided to be a little more adventurous.

In the glass: light body with a rich ruby.

On the nose: fresh outta the bottle, this was such pure minerality and flinty notes. Remarkably minerally. Some funk, notes of sulfur. But my gosh, as the wine breathed, the red berries just kept intensifying and creeping forward. By the 1.5 hours mark, it was in full bloom. Notes of intensely perfumey red berries, spices, mild oak. A touch of plumminess developed. In balance with that intense minerality. This was utterly beautiful.

On the palate: high acidity. Looooong finish. Elegant on the palate, yet that purity and intensity of red fruits. This was so beautiful. The only thing was that this was still an absolute baby, and the wine could benefit from considerable age to round off the palate.

This was so pretty. I loved it.
