This is perhaps my 3rd time drinking this, and still a blast. A flash of electricity and minerality
In the glass: bright gold, albeit deeper and richer than the Pecorino
On the nose: bright citrus, and a big wallop of minerality mixed with some nuttiness?? Touch of green apple.
On the palate: a wide flash of high acidity, that’s just bright, energetic, super juicy and a surprisingly long finish. Delicious with the appetizers – esp with that burrata x olives x anchovies
