With Hart at the fantastic Mapu.
Served alongside an Aussie Cab x Syrah blend.

MAN. This is a good Syrah. Not really the savory game + pepper, but just super pure balanced fruits that’s super fresh.

In the glass: Bright rich ruby. Mid bodied.

On the nose: man, this is so pure and pretty. Pure Blackcurrant and blueberries. Touch of vanilla and sweet oak. Touch of spice. This dark floral tone. This is very very pretty. With air, this gets very very blueberried!

On the palate: high concentration and intensity, but with this amazing freshness that just lingers on and on. Medium bodied. Juicy. I need to look into this but this is either mid/low alcohol, or the wine maker did some magic with integrating the alcohol with that beautiful fruit.

Putting aside the beauty of this wine, Chef made the ballsy move of pairing this against a dish comprising baby onions, some sorta vegetal crisp, and wait for it…. This intenseeee cheese sauce. Yes, this is a pairing.
