I’m not gonna lie. I was slightly nervous about trying this a second time in a month. What if it wasn’t REALLY as good as I recalled at the Ibid dinner? Did I actually end up wrongly convincing multiple people to split a case with me? thankfully, it is indeed as beautiful a wine as I remembered. It does need some time to breathe (I recommend at least an hour, while the winemaker suggests a few): we had the benefit of decanting the wine for at least an hour at Ibid, vs letting it breathe ~15-20mins in bottle, and the difference was huge. That said, when it does get ample time to breathe, it is truly a beautiful nose. I’m almost tempted to upgrade it to a full 5.0
