I have a small side project to age a few specific whites: high-end trebbianos, and Domaine Huet’s chenin Blanc. I was telling someone (very exp collector) about how I was collecting the secs for the latter, and he said I was a fool. Apparently the Demi-sec, with its touch of sugar, becomes even more magical with age than the secs. So here we are. I bought the 2009 LHL to drink with Brandon.
The Chablis. I fucking love Chablis. I keep trying to find sub-100 cold vintage Chablis, but they’re amazing once in a blue moon, and very meh most other times. WE rated these both super well, so we will see.
