With Hart and crew at Hayop for James’ birthday dinner

Aged 36 months on the lees.

In the glass: bright rich gold. Clear.

On the nose: intensely mineral, with ripe yellow fruits.

On the palate: inteeeense salinity. Super ripe, and high intensity on the palate. I didn’t manage to check the bottle for the abv – it felt well balanced against the sheer intensity of the wine, but it was definitely elevated with a fair bit of heat on the exhale. Touch silky and bitter on the finish.
