This was the richer yeastier style of sparkling wine that well, I don’t quite enjoy as much. Made from 100% Pinot Noir from the best Montagne de Reims crus. Once harvested, the grapes are destemmed and then placed in a maceration vat. In this vat, the juice macerates with the grape skins for 48 to 72 hours. The juice is then run off (separated from the skins), fermented and vinified in a separate vat. Then aged in cellar for 5 years.
In the glass was a pink salmon color.
On the nose: yeasty, with raspberry and red currant. Some kinda very ripe citrus. Maybe grape fruit?
On the palate: rich, bubbly, acidic. I first drank this while I was rushing to get the appetizer out and it gave me a jolt of energy hehe.
