This was the white wine at our wedding 🙂

In the glass: a very pale light golden hay. Clear.

On the nose: citrus. A slightly reductive minerality. Some stone fruit, but I couldn’t place it.

On the palate: bone dry, and with a surprising salinity to it. I wasn’t quite expecting that, but I loved it with the caviar! This would’ve paired so well with the lobster consommé, except I thought the chef over seasoned the broth. Mid+ acidity. Mid/mid- finish.

The wine stayed a little tight throughout the evening. Maybe because it’s such a baby.

I enjoyed this, and actually drank considerably more of it than the bubbly. This isn’t exactly the perfect Chablis for me; I generally prefer a more laser / aggressive minerality that’s just so uniquely Chablis. But this as a large dinner white? Crowd pleaser and a winner. The Sydney folks loved it.
